Fresh Lifestyle Monday is back and serving up a great dish for the upcoming holiday weekend! Going forward we’ll be sharing a new recipe on the first Monday of every month. This one was too good to wait until after the 4th so we are coming a few days early for July’s recipe!
In Minnesota, we love corn season. Give it to me simple with butter + salt and I’ll be happy all day but after eating at a new local restaurant with an amazing Elote style dish, I had to try it at home. After searching numerous recipes, I narrowed down the ingredients to this perfect recipe. Fresh and organic ingredients + mayo mmmmm so good! I generally don’t omit the mayo but it can be substituted for a mayo alternative such as Just Mayo!
Elote Off The Cob
6 Cobs of Corn 3 tbsp Sour Cream 3 tbsp Mayo (or Just Mayo) 2 tbsp Fresh Lime Juice 1/2 tbsp Chilli Powder 1/2 cup Grated Cotija Cheese 1/4 cup Chopped Green Onion 1/4 cup Chopped Cilantro Salt to Taste Cayenne to taste If using a charcoal grill start the coals to get heated up! Boil corn until slightly soft. (You can also microwave in the husk for 5 minutes for quicker results.) In the meantime mix together; sour cream, mayo, lime juice, chili powder, green onion and cotija cheese. Remove corn from pot or microwave and place on a hot grill. Grill and turn until some of the kernels are charred. Be sure not to char the whole thing! And, if you prefer less of the charred grill flavor then blacken it less or only char half of the cobs. Remove corn from grill and cut the kernels off of the cob into a bowl. Add the sauce mixture to the corn kernels and mix together. Salt to taste. Add cayenne for extra spice! Top with cilantro + alittle extra cotija! Serve warm!!
